As soon as you take one step into Isabel’s Bakery, one can easily observe what is important to co-owner and the creative genius behind the creations, Debbie Brockhoff. From multi-level cakes to cupcakes to brownies and cookies, there’s nothing ordinary about Isabel’s selections.

“Everybody has birthdays, so we try to please everybody’s birthday desires,” Brockhoff said. “It’s kind of fun because some of those ideas for creations have been kids drawing out their designs, and then we put it together on the cake. They put it on paper, and we put it on cake. The cake itself is a canvas. What we do to it is just the masterpiece.

“That’s one of the things I’ve learned in six years, it is a canvas and anything can happen to that cake. We can get as creative as you can imagine. My biggest thing is use your imagination and come and see us. Let us create a masterpiece for you.”

Brockhoff has been helping create masterpieces at Isabel’s, located within the Spanish Springs Shopping Center on Disc Drive, for a little over six years now.

The latest creations by the staff at Isabel’s are sights to see. There are five Halloween-inspired cakes created by two normal decorators and three members of the staff who don’t usually decorate. Customers are able to vote on their favorites, and the winner of the friendly competition will receive a gift certificate.

“The beauty of it is, any of these cakes can be duplicated and we can make them for your party,” Brockhoff said.

Like most girls at a young age, Brockhoff developed a love for baking when her mother passed down her own love of baking. But the learning didn’t stop there.

Brockhoff isn’t shy about expressing her love for watching shows like “Cake Boss” or “Ace of Cakes.” The staff of Isabel’s is constantly attending trade shows in order to learn new techniques they can bring back to the bakery in order to enhance the experience for the customers.

Prior to Isabel’s opening, Brockhoff was a member of the corporate world, working at IGT before becoming a housewife and raising her children. When it was time to return to work, she knew she didn’t want to go back to corporate America. Instead, she catered to her creative side and opened Isabel’s with her husband, Wayne, who is the “numbers guy.”

It hasn’t always been easy for the Brockhoffs. The recession took its toll.

“We didn’t imagine the recession. I think the recession is the hardest,” Debbie said. “We tried to just keep our head above water the whole time. Lots of hard work.”

Currently, Isabel’s employs four full-time employees and four part-time. Brockhoff said she tries to hire part-time workers in order to help them earn experience. When Isabel’s opened, there was a staff of four and it has since doubled despite the recession.

“It’s still challenging, but I feel like with our reputation and our ability to let our customers use their imagination, I think it’s really helped us,” Brockhoff said.
